Excellent carbon steel panThese top quality pans fry at any temperature and, in the process, build up a very serviceable - and replaceable - non stick surface, which means they only need to be wiped clean with a cloth and a little cold water. They really are the way to go if you want to move away from the tyranny of having to replace non stick-pans every couple of years because the surface wears out. As a tip, avoid using them for poaching as the hot liquid will reduce the non-stick surface. But even if that happens, a little vegetable oil put into a hot pan, then wiped out, will bring it back. Highly recommended.
