Great wok, could be a little biggerI bought a set of these pans (the 3 frying ones and the wok) having read the reviews. and they seemed quite polarizing, they are either great or don't work. and in my own experience i cannot fault them. The wok is a good size, but possibly be a little larger as you might struggle to get everything in if cooking for more than 4 people.
i believe the cleaning and seasoning when you first get them is critical, while the instructions are quite light, id researched before hand and the reality is that the longer you spend doing those initial seasons the better they work. i did two coatings, and each one probably took about 20mins not including letting the pan cool down. keeping the pan just at the point it smokes but not too much for quite some time. it stunk the house out even with the extraction fan on.
however the result is really impressive. they cook as easy as regular non stick, but it is much easier to get things crispy, or add that bit of charred coating which tastes so nice. and cleaning was simple enough too.
i think the ultimate test is either pancakes or fried eggs, and the pancakes passed with flying colours, the fried eggs were a bit mixed though. the first never stuck to the pan and cooked perfectly, the others have required a little persuasion to come away from the pan. however they do eventually, and have been easy to clean up afterwards.
regular non stick pans tend to stop being as non stick after about a year or two at most. my old pans were around 8 years old and were well beyond their best. so long as you put in the time to clean and season these properly i have no reason to doubt their non stick properties will improve, and last for a long as i need them to.
they do require more work to get the best out of them, so these are not for anyone who wants the convenience of teflon non stick. but i have no complaints so far.
