Rated 5 out of 5 by from perfect little pan with a little care I bought a set of these pans (the 3 frying ones and the wok) having read the reviews. and they seemed quite polarizing, they are either great or don't work. and in my own experience i cannot fault them. i believe the cleaning and seasoning when you first get them is critical, while the instructions are quite light, id researched before hand and the reality is that the longer you spend doing those initial seasons the better they work. i did two coatings, and each one probably took about 20mins not including letting the pan cool down. keeping the pan just at the point it smokes but not too much for quite some time. it stunk the house out even with the extraction fan on. however the result is really impressive. they cook as easy as regular non stick, but it is much easier to get things crispy, or add that bit of charred coating which tastes so nice. and cleaning was simple enough too. i think the ultimate test is either pancakes or fried eggs, and the pancakes passed with flying colours, the fried eggs were a bit mixed though. the first never stuck to the pan and cooked perfectly, the others have required a little persuasion to come away from the pan. however they do eventually, and have been easy to clean up afterwards. regular non stick pans tend to stop being as non stick after about a year or two at most. my old pans were around 8 years old and were well beyond their best. so long as you put in the time to clean and season these properly i have no reason to doubt their non stick properties will improve, and last for a long as i need them to. they do require more work to get the best out of them, so these are not for anyone who wants the convenience of teflon non stick. but i have no complaints so far.

Rated 4 out of 5 by from You can use metal spatula, but requires commitment Fed up with the health concerns associated with Teflon non-stick, and realising that every new type of non-stick supposed to last for ever only actually lasts long enough for a newer still type to come out which you think will last for ever, I decided to leave the non-stick rat race. This leaves various options. Delia once recommended aluminium, but I was disappointed with the result of her recommendation (which also seemed to release a dark grey substance... onto the food?) and a friend of mine who cooks professionally suggested carbon steel was better. Actually, an uncoated carbon steel pan has been in the family for several generations and was mine for the taking, but getting it home proved too difficult, though I did get to try it out and I already have a carbon steel wok which works well. Carbon steel pans need to be washed and dried in quite a specific way and it is a bit complicated until you get used to how to care for them. Fortunately I was already used to the process. Expecting to have to go through a fair few seasoning cycles before I could use this new pan, I was delighted to find that a kind of factory pre-seasoning had already been applied. Like the product of home seasoning, this will eventually start to come off and have to be renewed (according to the instructions), but that is a part of the usual maintenance. It hasn't (yet) happened to my pan. This pre-seasoning means this new pan is performing as well as the ancient pan I was offered and is as good as a new non-stick pan with the difference that I can use a metal spatula to turn eggs and the pan should, in theory, last me for the several remaining decades I hope to be around for. Ergonomically, this pan works well, though the nature of the curve of the sides of the pan means 20cm is not quite big enough to fry two burgers in as comfortably as I might have hoped, it would also be a tad small for a pancake, and it would be good if Robert Dyas would also offer the larger sizes of this product that are available as I might wish to buy a larger one as well. My only criticism is that on first use the rubber cover over the metal handle started to slip off the metal very slightly which, while not sufficient to make me drop the pan by any means, did make me a trifle uneasy, but this has not happened since the very first use. A few people have left negative reviews. I would suggest that they some customers might not be quite aware this is an 'uncoated' carbon steel pan which requires a level of commitment that non-stick pans do not. The supplied instructions for the pan are fairly comprehensive (though a supplementary read of online articles for carbon steel pans is something I would firmly recommend), but I can see that a buyer could easily be confused since the product is not actually available to see in the branches and the Dyas website does not supply the full blurb.

Rated 4 out of 5 by from Really good omelette pan. Lovely little pan. Good heat distribution through food. Food slips off easily, and the inside of the pan is very easy to clean. Handle nearest to pan is the only bit which is harder to clean but it always is on any pan.
